Southern Japan - Volcanic Highlands

At Whittard, we believe every exceptional cup begins at origin. Our ceremonial grade matcha starts its journey on the slopes of the Kirishima volcano, in the mountainous Uji region of Kagoshima, Japan's southernmost prefecture and one of the most revered areas for premium tencha. Here, a unique combination of subtropical climate and mineral-rich volcanic soil nurtures leaves of remarkable depth, vibrancy, and character.

The tea bushes are grown under the shade for six weeks before the leaves are picked. With minimal sunlight, the plant increases its production of chlorophyll and other nutrients in order to grow, making for a sweeter flavour and darker colour. The leaves are then steamed as quickly as possible to halt oxidation, dried and destemmed and deveined using electrostatic machinery. Finally, they're ground in a hand-carved stone mill.

Because matcha is crafted from the whole leaf, nothing is lost, only elevated. The result is a smooth, jewel-bright cup that reflects our dedication to quality, craftsmanship, and the simple pleasure of tea done properly.

The Art of Making Traditional Matcha

The word matcha - 抹茶 - translates as 'ma' (powder) and 'cha' (tea). Its preparation is a meditative ritual rooted in over 1,200 years of Japanese tea culture. Each whisking is a moment of artistry, turning ordinary tea time into an extraordinary experience. Learn how to brew the perfect cup using traditional Matcha Equipment.

Prepare Your Tools

A proper matcha experience begins with the right equipment:

Ceremonial-grade
matcha powder

Fresh, finely ground, and bright green.

Bamboo scoop
(chasaku)

For accurate measurement.

Bamboo whisk
(chasen)

To create a delicate, even froth.

Wide bowl
(chawan)

Ideal for whisking
and serving.

Each tool plays a role in preserving the flavour, texture, and ritual of the preparation.

Measure the Matcha

Scoop 1-2 grams of matcha powder into your bowl:

1 GRAM

For a lighter, frothy (usucha).

2 GRAM

For a more concentrated, full-bodied experience (koicha).

Precision at this stage sets the foundation for a perfect cup.

Heat the Water

Use water heated to 75-80° C. Boiling water can scorch the powder and result in bitterness; slightly cooler water preserves its natural sweetness and vegetal notes.

Create a Paste

Add a small splash of water to the powder and whisk into a smooth paste. This removes clumps and ensures an even texture.

Add Water

Pour in the rest of the hot water, typically 50-70ml depending on your preferred strength.

Whisk to Perfection

Using the whisk, use a brisk back-and-forth motion until the matcha forms a fine, even froth. Aim for a smooth, velvety texture without large bubbles.

Serve

Drink directly from the bowl or pour over steamed milk for a delicious matcha latte. The flavour should be bright and fresh, with a subtle umami depth and a creamy, delicate froth.

Frequently Asked Questions About Matcha

Everything you need to know about ceremonial grade matcha, its health benefits, preparation and the Whittard matcha range.

What is ceremonial grade matcha?

Ceremonial grade matcha is the highest quality matcha, made from the youngest tea leaves and stone-ground into an ultra-fine powder. It is designed to be enjoyed simply with water, delivering a smooth, naturally sweet flavour with minimal bitterness. It can also be used to make a latte when blended with milk, for a creamier, more indulgent serve.

How should I store matcha powder?

Matcha should be stored in an airtight container in a cool, dry place away from light and heat to help preserve its vibrant colour, aroma, and freshness for longer.

Does matcha contain caffeine?

Yes, matcha naturally contains caffeine. However, it also contains L-theanine, which helps promote a calm, steady energy release—avoiding the sharp spike and crash often associated with coffee.

Can I drink matcha every day?

Yes, matcha is commonly enjoyed daily as part of a balanced lifestyle. Many people use it as a morning or midday alternative to coffee for sustained, gentle energy.

How much matcha should I use per cup?

A typical serving is 1-2 grams per cup or one heaped chasaku matcha spoon. Use less for a lighter, more delicate drink, or more for a stronger, more intense flavour experience.

Is matcha suitable for lattes?

Yes - ceremonial grade matcha can be enjoyed as a latte, though its delicate flavour also shines when whisked with water. For lattes, it pairs beautifully with both dairy and plant-based milks.
