    In the streets of Mumbai, you'll be offered glasses of steaming hot chai steeped in shed-loads of sugar. Add a topping of frothy milk and a spoonful of honey to our Chilli Chai and you'll have yourself a chai latte.

The word "chai" means tea in many languages, deriving from the Mandarin Chinese "chá". The first English record of the word dates back to 1615 when an English merchant sent a letter to Macao requesting "the very best sort of chaw". We’re not sure if his request was met with success, but we’ve given this tea the number 615 nevertheless…

How to Make

1 tsp loose tea

200ml water

  1. Pop 1 tsp of loose tea per cup into a Pao mug or teapot with an infuser
  2. Pour in 200ml water per cup boiled to 98 degrees
  3. Wait for 3-5 minutes
  4. Remove infuser and enjoy

100ml freshly boiled water

Ice

Fruit or mint to garnish (optional)

  1. Add the loose tea to a refillable teabag or an infuser and place in a cup or heat-resistant glass
  2. Pour over freshly boiled water. Remove the teabag/infuser
  3. Top up with plenty of ice
  4. Garnish with fruit and sprigs of mint if desired
