Herbal rooibos tea from the Cederberg Mountains in South Africa is usually processed in a similar manner to black tea, turning the green, needle-like leaves to a rich russet colour as they react with the oxygen in the air.
If you're fond of the naturally sweet, honeyed taste of rooibos and the fresh, verdant flavours of a good green tea, you might like to try this more unusual style of green rooibos, created by heating the leaves to stop the oxidation process.

Herbal rooibos and honeybush are unique to the Cederberg Mountains in South Africa, where they've been harvested by Khoisan tribes for centuries. The leaves are usually processed in a similar way to black tea, giving a fruity, caffeine-free infusion.
South African "Red Bush" Tea
Rooibos – a bush grown on the mountains of South Africa – has long been harvested to create a naturally caffeine-free herbal infusion with a smooth, treacle-toned taste. Seventeenth-century Dutch settlers soon developed a taste for the drink as a handy substitute for tea, but local bushmen had already passed down the secret of rooibos for generations. The leaves undergo a similar process to black tea, being oxidised for a distinctive reddish-brown colour and malty flavour.
