Shade-grown loose leaf Japanese green tea
Gyokuro, whose name translates as "jade dew", is widely considered the finest green tea Japan produces.
Around three weeks before harvest, the tea bushes are shaded from direct sunlight. Growth slows, chlorophyll rises for that deep, vivid green colour, and levels of the amino acid L-theanine climb dramatically. These are the source of that gentle, savoury umami quality: smooth, sweet and richly satisfying.
It's quite unlike the grassy brightness of most green teas.
Brew your Gyokuro at a low 55-75 degrees to coax out its sweet, subtle umami taste and creamy texture. You can rebrew the leaves a few times, as this little trick means they won't lose their flavour or nutrients right away.
